Spicy Arabic Rice

Ingredients
- Oil 2 tbsp
- Onion 1 medium (chopped)
- Tomatoes 2 (chopped)
- Tomato paste 1 tbsp
- Dry lemon skin 1 tsp
- Bay leaf 1
- Basmati rice 2 cups
- Water as required
- For Spices
- Turmeric 1 tsp
- Ground pepper 1/2 tsp
- Ginger powder 1 tsp
- Coriander powder 1 tsp
- Red chilli powder 1/2 tsp
- Cinnamon powder 1/2 tsp
- Salt 1 tsp
- Cloves (approximately 6 of them)
- Cardamom (approximately 6 of them)
Instructions
- Heat the oil in a large pan and fry the onion. Now add the chopped tomatoes, tomato paste, dried lemon and bay leaf.
- Add the basmati rice into the pan, followed by the water. Stir the rice, making sure it doesn’t stick to the bottom of the pot.
- Stir in all the spices (mentioned in spices). Bring the rice to the boil. Simmer until the rice has absorbed the water. Serve!
Notes
To cook basmati rice, for every 1 cup of rice, cook in 1 1/2 cups of water.
