  • Chicken 1 kg
  • Tomatoes ½ kg (chopped)
  • Ginger, garlic 2 tbsp (finely chopped)
  • Green chilies 8-10
  • Turmeric powder ½ tsp
  • Fresh crushed black pepper 1 tsp
  • Special karahi masala 2 tbsp
  • Garam masala powder 1 tsp
  • Ghee/oil ½ cup
  • Lemon juice 1 tbsp
  • Julian ginger

Special Karahi Masala

  • Cumin seeds 1 tbsp
  • Coriander seeds 1 tbsp
  • Crushed red chili 1 tbsp
  • Qasoor methi 1 tsp
  • Khatai powder 1 tsp
  • Chaat masala 1 tbsp
  • Ajween ¼ tsp


  1. Heat ghee/oil in a pan and fry chicken on high heat until changes color.
  2. Remove chicken from ghee/oil and keep aside.
  3. In the same ghee add finely chopped ginger and garlic; fry them. When it gives aroma add chopped tomato.
  4. Fry at high flame for 10 minutes, now add turmeric powder, fried chicken, salt, and ¼ cup water.
  5. Cover and cook at medium flame. After 15 minutes, increase the flame to high and fry chicken.
  6. Now add crushed black pepper, karahi masala, garam masala powder and cook nicely until ghee separates.
  7. Add lemon juice, green chilies, and Julian ginger.
    Give it coal smoke for 5 minutes. Dish out and serve with roti/naan and raita.

Special Karahi Masala

  1. Dry roast cumin seeds, coriander seeds, crushed red chili, and qasoori methi.

Spicy Chicken Karahi is one of the scrumptious Karahi Recipe I have ever tasted. The blend of simple ingredients with dry fenugreek leaves makes it mouthwatering. I used 3 onion in it because my family wants masala in a karahi, you can use 1 or 2 as well.


  • Chicken 1 kg
  • Yogurt 1 cup
  • Salt ½ tsp
  • Oil 3/4 cup
  • Onion 3 medium (sliced)
  • Ginger garlic paste 2 tsp
  • Tomato 2 (chopped)
  • Green chilies 3 (chopped)
  • Qasoori methi (dry fenugreek leaves) 2 tbsp
  • Ginger and green chilies for garnish

Karahi Masala Spices

  • Salt to taste
  • Red chili powder ½ tsp
  • Crushed red chili ½ tsp
  • Paprika/Kashmiri red chili ¼ tsp
  • Black pepper powder ½ tsp
  • Cumin powder 1 tsp
  • Coriander powder 1 tsp
  • Turmeric powder ¼ tsp
  • Garam masala powder ½ tsp


  1. Marinade chicken with yogurt and salt for 30 minutes.
  2. Heat up oil and fry the onion until light brown. Add ginger-garlic paste and saute for a minute, add a splash of water and give a quick stir.
  3. Put in tomato and green chilies; cook for 3-4 minutes then add chicken and all karahi masala spices. Mix it covers and cooks on high flame for 2-3 minutes or until it starts bubbling. Then reduce the flame to medium-low.
  4. Cook until chicken half tender. Now add qasoori methi (dry fenugreek leaves) and cook again until chicken tender and water evaporates and oil comes on top.

  • 1 kg chicken
  • 2-3 small onion (sliced)
  • ½ kg tomato (sliced)
  • 1 tablespoon ginger garlic paste
  • 1 tsp red chili powder
  • 1 tsp crushed red chili

  • 8 ounces butter
  • 1 cup yogurt
  • 1 tsp black pepper powder
  • 1 tablespoon coriander seeds (crushed)
  • ½ tsp garam masala powder
  • A handful of green coriander (chopped)

  • 2 tablespoons ginger (sliced)
  • 2 cups of water


  1. Take a deep cooking pan. Add chicken pieces, sliced onion, sliced tomato, ginger garlic paste, red chili powder, crushed red chili, salt, and water.

  3. Shift cooked chicken in wok; add yogurt, mix then put on flame.
  4. Add butter; cook on medium-high flame for 6-8 minutes.

  • Yogurt 1 cup
  • Red chili powder 1 tsp
  • Salt 1½ tsp

  • Cumin seeds 2 tsp (crushed)

  • Coriander 1 tsp (crushed)
  • Green cardamom 4
  • Cloves 4

Some people use yogurt as an alternative to tomato but in this recipe, if you use yogurt it will not give the right taste of Afghani Karahi.


  • 1 kg Chicken
  • 1/2 kg Tomatoes
  • 1 tbsp Ginger garlic paste
  • 1 – 1/2 tbsp crushed red chili
  • Salt to taste
  • 6 green chili
  • 1 tbsp Whole coriander seeds
  • 1 tsp White cumin seeds
  • 1 tsp Whole black pepper
  • 1 cup Ghee
  • 1 lemon thinly sliced
  • 2 tbsp ginger ( for garnish)


  1. Roast coriander seeds, cumin seeds, and black pepper and grind them all.
  2. Fry chicken in ghee and take it out on the plate.
  3. Put sliced tomatoes in a pan and cover them so they will get soft in steam and their own water
  4. Now add ginger garlic paste, salt, red chili, whole green chilies and fry just for 2-3 minutes.
  5. After that add fried chicken pieces in this tomato gravy and ground spices along with ghee (in which we fry chicken) and cover it for about 10 min.
  6. While serving add coriander leaves, ginger slices, and lemon slices.


You can make it with oil, but I will suggest to make it with ghee once for an authentic taste.

7- Peshawari Namkeen Mandi Karahi

Namkeen Mandi Karhai is a famous food of Peshawar, basically, it prepares with beef, but according to your taste, you can make it with chicken or mutton.

  • Chicken with Bone 700 grams
  • Tomatoes 4-5
  • Green Chilies (Small) 5-6
  • Green Chilies(Large) 5-6
  • Garlic (Chopped) 4-5 cloves
