Ingredients
For Jamaican Rice
- Rice 1 ½ cups (soaked)
- Clarified butter/oil 4 tbsp
- Sabat garam masala 1 tbsp
- Onion 1 (sliced)
- Garlic 1 tsp (chopped)
- Red kidney beans ¾ cup (boiled)
- Crushed red chili 1 tbsp
- Capsicum 1 (small cubes)
- Coconut milk ½ cup
- Salt to taste
For Grilled Chicken
- Chicken breast 1
- Ginger garlic paste 1 tbsp
- Crushed red chili 1 tsp
- Salt to taste
- Vinegar 1 tbsp
- Soya sauce 1 tbsp
Instructions
For Jamaican Rice
- Boil the rice until 30% done.
- Heat up clarified butter/oil in a pan and sizzle sabat garam masala then add onion and fry until golden.
- Now add garlic, red beans, salt and crushed red chili and sauté it for a minute.
- Add rice and capsicum and toss gently.
- Add in coconut milk along salt and simmer rice on slow heat until completely done.
For Grilled Chicken
- Cut chicken breast into two parts and marinade it wit ginger garlic paste, crushed red chili, salt, vinegar and soya sauce. Leave for 1 hour.
- Heat gill pan and grease with oil; grill chicken from both sides until tender.
Presentation
- Dish out rice and place grilled chicken on one side.
- Serve hot.
