Ingredients
- Oil 1 cup
- Onion 2 medium (sliced)
- Yogurt 1 cup
- Black cumin 1 tsp (roasted & crushed)
- White cumin 1 tsp (roasted & crushed)
- Ginger paste 1 tsp
- Garlic paste 2 tsp
- Carrot 250 gm (cubed)
- Potatoes 3 medium (cubed)
- Turnip 250 gm (cubed)
- Bottle gourd 250 gm (cubed)
- Peas 250 gm
- Cauliflower 250 gm (separated flower)
- Capsicums 3 (cubed)
- Red chili powder 2 tsp
- Green chili paste 1 tsp
- Salt 1 tsp or to taste
- Chicken cubes 1
- Water as required
- Flour ¼ cup (mixed in water)
- Nihari Spices
- Nutmeg powder 1 tsp
- Funnel seeds 2 tsp
- Dry whole coriander 2 tsp
- Dry ginger 1 tsp
- Garnishing
- Fresh coriander leaves ½ bunch
- Ginger 1 medium (julienned)
- Lemons 4 (cut in half)
- Green chilies 6 (sliced)
Instructions
- Grind nihari spices into powder.
- Dry roast black and white cumin in a frying pan and crush.
- Fry onion in oil until golden. Take out fried onion, crush and mix in yogurt.
- In same oil stir in crushed black and white cumin. Add ginger paste, garlic paste, carrot, potatoes, turnip, bottle gourd, and fry.
- Then put red chili powder, green chili paste, salt, chicken cubes and one glass water to cook vegetables.
- When vegetables soft, add peas, cauliflower, capsicum, and yogurt mixture. Stir fry till oil separates.
- Add water according to your broth requirement and bring to a full boil. Add the flour paste for thickness.
- Meanwhile add ground nihari spices and simmer for 2-3 minutes.
- Dish out in a bowl, garnish and serve with Nihari.
