Chocolate Pastry Recipe

How to Make Chocolate Pastry


For Sponge

  • 15 eggs
  • 300g sugar
  • 300g plain flour
  • 1 tbsp baking powder
  • 1 cup sugar syrup

Chocolate Sauce

  • 300g cooking chocolate
  • 2 tbsp sugar
  • 1 tbsp oil/butter

For Butter Cream

  • 200g butter
  • 5 tbsp icing sugar
  • 1 tbsp coco powder
  • ½ cup fresh cream
  • 1 tbsp coco powder


For Sponge

  1. Preheat oven on 250 Degree C. Grease baking try with butter, set a butter paper on try and than grease it too.
  2. Beat eggs in a bowl.
  3. Add slowly sugar in eggs while beating. Add baking powder and beat again.
  4. Include plain flour slowly in eggs mixture while beating.
  5. Pour mixture in prepared tray. Keep it in oven for baking 12-14 minutes.
  6. Reduce temperature to 200 Degree C after 2-3 minutes of placing tray in oven.
  7. After 10 minutes reduce it too 150 Degree C.
  8. Cool cake on room temperature before decoration.

Remember baking try should be half with mixture not more than half.

For Chocolate Sauce

In double boiler melt cooking chocolate, sugar, mix to dissolve, add oil/butter and mix.

For Butter Cream

  1. Beat butter, icing sugar and 1/2 tbsp coco powder.
  2. Add fresh cream and remaining coco powder. Beat on high speed till thick. Keep it in fridge.

Complete Method

  1. Divide cake sponge in 2 layers.
  2. Drop sugar syrup on both layers.
  3. On one layer apply fully butter cream than set second layer on first layer and cover it with chocolate sauce.
  4. Drop 2 tbsp butter cream on chocolate sauce and mix this in such way that it becomes look like shading of chocolate and butter.
  5. Cut in pastry shape.
  6. Add butter cream in piping bag and make flowers on pastry one or two flowers.

Keep in fridge and let cool.
