1- BBQ Chicken Boti

Ingredients
- 1 kg Chicken Meat (18 to 20 pieces)
- 1 tbsp raw papaya paste
- 2 tbsp Yogurt
- 1 1/2 tsp salt
- 1 tsp Green chilies paste
- 1 tsp Red chili powder
- 1 tsp All spices powder
- 1 tsp White cumin seeds (roasted and ground)
- 2 tbsp Lemon juice
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- Skewers as required
Instructions
- Marinate chicken pieces with all the above ingredients and put this marinated chicken pieces in the refrigerator for 4 to 5 hours.
- Thread chicken pieces on skewers and cook on the BBQ grill.
- While barbequing when chicken is half done, brush them with oil, and continue barbequing until it is finally done.
- Serve with Paratha and chutney.
Note
You can also bake Chicken Boti, and when baked, take a pan put chicken with burning coal, drop oil on coal and cover the pan for 1 minute. It will give very good smoked smell.
2- Buffalo Chicken Bites
Buffalo Chicken Bites is a super delicious dish with soft and tender chicken coated in a hot tangy sauce. After frying if you don’t want to coat the chicken leave it and serve just as it is. It gives a lip-smacking taste.
Ingredients
- Skinless chicken breasts 2 (cut into 1½” chunks)
- Buttermilk ½ cup
- Salt 1 tsp
- Red hot sauce ¾ cup
- Water 2 tbsp
- Butter 1 tbsp
- Sugar ½ tsp
- Cornstarch 1 tbsp + 1 cups
- Egg whites 3
- Flour ½ cup
- Baking soda ½ tsp
- Oil for frying
Instructions
- Put the chicken, buttermilk, and salt into a zip-lock bag and refrigerate for 30 minutes (or up to two hours).
- In a small pot, combine the hot sauce, water, butter, sugar, and 1 tbsp cornstarch. Whisk over medium heat until thickened, 3 – 5 minutes. Turn off heat
- In a medium bowl, beat the egg whites just until very foamy and soft peaks just start to form.
- In a second medium bowl stir together the flour, baking soda, remaining 1½ cups cornstarch, and 6½ tbsp of the hot sauce until it resembles a coarse meal.
- Remove the chicken from the buttermilk marinade and lightly pat dry. Add half of the chicken to the egg whites and toss to coat well. Remove the chicken from the egg whites and add it to the cornstarch mixture, tossing to coat, and then pressing the breading into the chicken to ensure it is well coated. Remove the chicken to a plate and repeat with the remaining chicken chunks.
- Heat oil and fry over medium heat for 4 to 5 minutes, until the chicken is golden brown, being sure not to over crowd the chicken (cook it in two or three batches). If necessary. While the chicken is frying, re-heat the sauce over medium heat.
- Toss the cooked chicken pieces with the sauce in a large bowl and serve.

- Cumin seeds 2 tsp
- Coriander seeds 1 tbsp
- Black peppercorns 10
- Cloves 3-4
- Cinnamon 1-inch stick
- Onion 1 medium (roughly sliced)
- Ginger 1-inch piece (Roughly sliced)
- Garlic 4 cloves
- Green chilies 3-4 (halved)
- Lemon juice 1 tbsp

Instructions
- Dry roast cumin seeds, coriander seeds, peppercorns, cloves, and cinnamon.
- Mix together onion, ginger, garlic, green chilies, lemon juice, and the roasted spices and grind to a fine paste. Add salt and mix well.
- Marinate chicken pieces in this paste for two hours in the refrigerator.
- Heat oil and cook the marinated chicken pieces stirring continuously. Reduce heat; cover and cook on low heat for five minutes or till chicken pieces are fully cooked, stirring occasionally.

- Capsicum 2
- Tomatoes 2
- Oil ¼ cup
- Onion 1 (chopped)
- Bay leaf 1
- Star anise 2
- Cinnamon 2 sticks
- Gram lentils boiled 125 gm
- Rice 300 gm
- Shashlik sticks as required
Instructions
- In a bowl marinated chicken pieces with tomato ketchup, soya sauce, Worchester sauce, salt, crushed black pepper, and lemon juice.
- Cut 2 onions, capsicum, and tomatoes into cubes. Thread marinated chicken in shashlik sticks alternating with vegetable cubes.
- Put shashlik sticks in a greased oven tray. Bake in a preheated oven for 15 – 20 minutes.
- Heat oil in a pan, add 1 chopped onion and sauté for few seconds. Now add bay leaf, star anise, and cinnamon sticks. Sauté for 2 minutes.
- Add boiled gram lentils, soaked rice, salt to taste, and water as required. Cook till rice cooked 80 % and water dries.
- Now put baked chicken sticks on top of rice. Cover with a little boiled rice and simmer on low flame for 8 – 10 minutes.
- Dish out in serving platter and serve.
10- Chicken Tikka Pulao Recipe

- Rice ½ kg (soaked)
For Chicken Marination
- Chicken 1 kg
- Yogurt 2 cups
- Ginger garlic paste 2 tbsp
- Chicken tikka masala 4 tbsp
For Gravy
- Oil ½ cup
- Onion 3 large (sliced)
- Red chili powder 1 tsp
- Black pepper powder 1 tsp
- Salt ½ tsp or to taste
- Lemon 2
- Green chilies 2 (sliced)
For Stock
- Water 4-5 glasses
- Chicken bones as required
- Garlic 4-6 cloves (crushed)
- Whole coriander 2 tbsp
- Salt to taste
Instructions
- Marinade chicken with yogurt, ginger garlic paste, and tikka masala. Leave for 1 hour.
- Add stock ingredients to a pan and cook for 15 minutes. It should be enough to cook the rice. Sieve through a strainer. Keep aside.
- Heat oil in another pan and golden brown onion. Remove onion.
- In the same oil put marinade chicken and cook until half cooked.
- Now add red chili powder, black pepper powder, salt, and lemon juice. Cook and when it’s tender, add green chilies.
- Meanwhile heat up stock, add rice (adjust salt) and cook until 80% rice is cooked.
- Keep rice on dum for 10 minutes.
- Dish out rice in a serving platter, put the chicken over rice, and sprinkle brown onion. Serve warm.

- Add ginger-garlic paste, red chili powder, salt, garam masala powder, lemon juice, and yogurt in chicken cubes and leave for marination.

For Rice
- Heat oil and fry cumin seeds. When smells, add yogurt, salt, green chilies, star anises, chopped coriander leaves, and finely chopped curry leaves. Later add boiled rice and mix well.
- Then add kewra water, grilled chicken, and yellow food color. In the end, add little water to simmer it for 10 minutes.
- Serve hot.
