1- Tikka Skewer Biryan

Ingredients
- Boiled Rice ½ kg
- Oil 1 cup
- Onion 250 grams (sliced)
- Potato ½ kg (cubed)
- Tomato 250 grams
- Yogurt 250 grams
- Salt 1 tsp
- Ginger Garlic Paste 1 tbsp
- Yellow Food Color ½ tsp
- Biryani Essence 4 drops
- Whole All Spice 1 tbsp
- Red Chili Powder 2-1/2 tsp
- Coriander Powder 2 tsp
- Turmeric ½ tsp
- Plum 100 grams
- Green Chili 10
- Green Coriander 1 bunch
- Mint Leaves 1 bunch
For Tikka Making
- Tikka Boti ½ kg
- Papaya Paste 2 tbsp
- Red Chili Powder 1 tbsp
- Vinegar 2 tbsp
- Lemon Juice 2 tbsp
- Salt ½ tsp
- Ginger, garlic paste 1 tsp
- Fried Cumin Seeds 1 tsp
- Shashlik Sticks as required
Instructions
- Marinade chicken with papaya paste, red chili powder, vinegar, lemon juice, salt, ginger garlic paste, fried cumin seeds and leave it for half an hour.
- In frying pan heat oil and fry onion till brown.
- Then add potato, tomato, yogurt, salt, ginger garlic paste, yellow food color, biryani essence, whole all spice, red chili powder, coriander powder, plum, turmeric. Cover and cook.
- Cook until potato tender then add green chili, coriander and mint leaves. Turn off the flame.

2- Steam White Karahi
Try making your chicken dish in a new way with simple ingredients. Steam White Karahi is a truly delicious chicken karahi with a smoky aroma. The smoky aroma gives it plenty of flavors and makes the simple chicken dish extra tasty.
Steam White Karahi would be lovely for a fancy dine with raita, salad, and paratha or roti.
Ingredients
- Chicken ½ kg
- Onion 2 medium (sliced)
- Yogurt 1 cup
- Ginger garlic paste 2 teaspoons
- Salt ½ teaspoon or to taste
- White pepper ½ teaspoon
- Black pepper powder ½ teaspoon
- Green chilies 4 (chopped)
- Oil ¼ cup
- Water as required
- Green coriander for garnishing
Instructions
- Marinade chicken with ginger garlic paste, salt, white pepper, black pepper powder, chopped green chilies, and yogurt for half an hour.
- Shift marinade chicken in a pan and cook until half chicken tender.
- In a separate pan fry onion in oil until golden brown. Remove onion from oil and crush.
- Add crushed onions and oil in half-cooked chicken.
- Place coal for smoke. Cover and cook until chicken completely tender about 15 minutes.
- Garnish with green coriander and serve with roti and raita.
For simple white karahi, skip the step of smoke and follow the rest of the recipe.
3- Beef and Vegetables Stir Fry
Combination of beef along carrot, capsicum and ketchup make a delicious dish. A tempting easy dinner recipe for family.

Ingredients
- Beef 300 g (strips)
- Salt to taste
- Black pepper ½ tsp
- Vinegar 2 tbsp
- Oil ¼ cup
- Ginger garlic paste 1 tsp
- Crushed red chili 1 tsp
- Carrot 1 (strips)
- Capsicum 1 (strips)
- Onion 1 (sliced)
- Soya sauce 2 tsp
- Sugar 1 tsp
- Stock ½ cup
- Corn flour 1 tbsp (mixed in 2 tbsp water)
- Ketchup 3 tbsp
- Green onion 2 (sliced)
Instructions
- Marinade beef strips with salt, black pepper and vinegar for 20 minutes.
- Heat oil and stir fry beef strips until tender, add water if required. Then add ginger garlic paste and cook for a minute.
- Add crushed red chili, carrot, capsicum, onion, soya sauce, sugar and stock. Cook for 3-4 minutes or until veggies get soft.
- Now add corn flour paste while stirring. After that stir in ketchup and green onion.
- Remove from heat and serve with boiled rice.
Note
You can boil the meat first, in this way you will also get stock. I also boiled it first then follow the rest of recipe.
4- Red BBQ Beef

Ingredients
- Beef ½ kg
- Ginger powder 1 tsp
- Honey 1 tbsp
- Soya sauce 2 to 3 tbsp
- Vinegar 2 tbsp
- Tomato paste 2 tbsp
- Five spic powder ½ tsp
- Red food color 1 tsp
- Papaya paste 2 tbsp
- Oil 1 to 2 tbsp
- Salt to taste
For Five Spice Powder
- Black pepper 1 tbsp
- Star anise 2 to 3
- Fennel seed 1 tbsp
- Cinnamon 2 sticks
- Cloves 3 to 4
Instructions
- In a mixing bowl add ginger powder, honey, soya sauce, vinegar, tomato paste, five spice powder, food color, papaya paste and salt to taste to mix and marinate meat and leave it for 2 to 3 hours.
- Then steam it or bake it in oven or cook on charcoal.
- Dish it out garnish with lemon and serve.
For Five Spice Powder
In a flat pan dry roast all ingredients and blend in a blender.
5- Shredded BBQ Chicken Curry

Ingredients
- Chicken ½ kg
- Yogurt ¼ cup
- Ginger garlic paste 1 tsp
- Tandoori/tikka masala 1 tbsp
- Red chili powder 1 tsp
- Salt to taste
- Water ¼ cup
- Fried onion 2 tbsp
- Tomato 2 medium
- Green chili 2-4
- Green coriander ¼ bunch
- Oil ¼ cup
- Sabat garam masala 1 tbsp
- Garam masala powder ½ tsp
- Lemon juice 2 tsp
Instructions
- Marinade chicken with yogurt, ginger garlic paste, tandoori masala, red chili and salt for 15 minutes.
- Put chicken in cooking pan, add water and cook on medium slow flame until chicken tender and approximately ¼ cup broth left.
- Take out chicken from pan and separate from bone in bite size chunks. Keep aside.
- Blend fried onion, tomato, green chili and green coriander in a paste.
- Heat oil in pan, sizzle sabat garam masala (whole mix spices) then pour tomato paste. Cook for 2 minutes.
- Now add chicken broth and allow boiling.
- Transfer chicken chunks and cook for a minute.
Sprinkle garam masala powder and lemon juice. Garnish with green coriander and serve.
Serving
- In boiled rice, drop yellow color in biryani style and serve over rice.
- Set rice in serving platter, pour BBQ Chicken Curry over rice, garnish with boiled eggs and serve.
6- Chicken Cheese Shawarma
A ymmy home made chicken shawrma recipe is on your way. Addition of tangy sauces make it succulent.
Ingredients
- Pita bread as required
For Chicken Marination
- Chicken 250/gm boneless (small cubes)
- Ginger garlic paste 1 tbsp
- Green chili paste 1 tsp
- Tikka masala 1 tbsp
- Tandoori masala 2 tbsp
- Black pepper 1/2 tsp
- Salt to taste
- Yogurt 4 tbsp
- Oil 1 tbsp
Instructions
- Take a pan and heat up oil, sauté ginger garlic paste than add green chili paste, tikka masala, tandoori masala, black pepper and salt.
- Add chicken and fry for a minute and then add 2 tbsp yogurt and cover lid.
- When tender and juices extract add remaining yogurt and cook until soft.
For Salad
- Cabbage shredded 1 medium
- Sweet corns half cup
- Capsicum chopped well 1 medium
- Green chili 2 chopped
- Black olives chopped (optional)
- Carrots chopped 1 small
- Butter 1 tbsp to fry veggies
Directions
- Warm the butter in frying pan.
- Fry veggies in butter, don’t over fry just till butter mixes well.
For Tangy Sauce
- Oil 1/4 cup
- Garlic 3 cloves
- Onion half small
- Black peppercorns 4 to 5
- Red button chilies 3
- Chili garlic sauce 3 tbsp
- Milk 1/ 2 cup
- Ketchup 1/2 cup
- Freshly chopped coriander handful
- Salt to taste
- Nandos lemon and herb 2 tbsp (optional)
- Tobasco sauce 2 tbsp (optional)
- Vinegar 1 tsp
Directions
- In a blender pour all of these ingredients and blend well.
For Creamy Mint Sauce
- Yogurt 1 cup
- Mayonnaise 1/3 cup
- Mint handful
- Black pepper 1 tbsp
- Soy sauce 2 tbsp
- Hot sauce 1 tbsp
- Salt to taste
Directions
- Blend all well and set aside.
For Cheese Sauce
Mozzarella cheese 1/2 cup
Cheddar cheese 1/2 cup
Milk 1/2 cup
Directions
- Mix well in sauce pan and warm until melted.
- Set aside.
Assembling
- Grill pita bread, add veggies, chicken and sauces on it.
- Roll it and serve immediately.

7- Chicken with Honey Sauce

Ingredients
- Chicken 1 kg (16 pieces)
- Salt 1 tsp heaped
- Crushed black pepper 1 tsp
- Crushed red pepper 1 tsp
- Ketchup ½ cup
- Honey 2 tbsp
- Chili sauce 2 tbsp
- Mustard paste 1 tsp
- Oil ¼ cup
- Butter 2 ounce
- Crushed garlic 1 tsp
Instructions
- Marinate chicken with salt, crushed black pepper and red pepper.
- Mix ketchup with honey, chili sauce and mustard, pour over the chicken. Mix gently.
- Heat oil and butter in a wok add crushed garlic, fry till golden, add in marinated chicken.
- Cover and
cook on low flame for 20 minutes. - Serve with dinner rolls.
8- Stuffed Chicken with Mince

Chicken Marination
- Whole chicken with skin 1
- Black pepper powder 1/2 tsp
- White pepper 1/4 tsp
- Worchester sauce 2 tbsp
- Salt to taste
For Beef Stuffing
- Beef mince 250g
- Onion 1 medium
- Green chilies 4-5 (rough chopped)
- Garlic 4 large cloves (chopped)
- Medium piece ginger
- Salt to taste
- Crushed red chili 1 tbsp
- Sesame seeds 3 tbsp
- Mustard paste 1 tbsp
- White pepper 1/4 tsp
- Black pepper powder 1/2 tsp
- Honey 2tbsp
- Worcester sauce 2 tbsp
- Pineapple 4 slices (rough chopped)
- Oil 4 tbsp
- Lemons 2
- Onion 1 (sliced)
Instructions
- Debone whole chicken in such style that bones will remove but it remains whole.
- Marinate chicken with all spices.
- Chop beef with onion, green chilies, ginger and garlic.
- Than add salt, crush red chili, sesame seeds, mustard paste, white pepper, black pepper, honey, Worcester sauce and chop again.
- Take out mince in a bowl and add pineapple. Mix well.
- Now place chicken in a plate and in open area from where bones were remove, fill it with mince.
- Fold chicken in such way that it looks like whole chicken.
- Heat up oil in a pan and place whole chicken in pan.
- Squeeze lemon juice on chicken top side.
- Move chicken in pan so not stick with the pan.
- When it becomes brown from down side turn it and squeeze lemon on top side.
- Cook until get color on other side.
- Grease baking try with oil, set sliced onion and arrange chicken on sliced onion.
- Set tray in preheated oven and bake at 200 degree for 15-20 minutes or till tender.
- Cut and serve warm.
