Chicken Hakka Noodles Recipe

Ingredients

For Boiling Noodles

  • Noodles 1 packet
  • Oil 1 tbsp
  • Salt 1 tsp

For Chicken and Veggies

  • Garlic 2 tbsp (Chopped)
  • Ginger 2 tsp (Chopped)
  • Boneless chicken ½ kg (Julienne)
  • Salt 1 tsp + 1 1/2 tsp or to taste
  • Black pepper 1 tsp + 1 tsp
  • Vinegar 2 tbsp
  • Soya sauce 3 tbsp
  • Spring onion whites ½ Cup
  • Onion sliced 1 medium
  • Carrot 1 medium (Julienne)
  • Capsicum medium 1 (Julienne)
  • Julienne cabbage ½ Cup
  • Spring onion greens ½ Cup
  • Chopped green chilies 2 tsp
  • Red chili flakes 1 ½ tsp
  • Oil ½ to ¾ Cup

Instructions

  1. Boil the noodles with 1 tbsp of oil & 1.5 tsp of salt till it has done. It shouldn’t be too much soft. Once boiled, rinse the noodles with cold water 1-2 times and set aside.
  2. In a wok add oil. When heated at moderate temperature, add ginger and garlic. Before their color changes add chicken with 1 tsp of salt & black pepper, and with 1 tbsp of vinegar and soya sauce. Keep the flame high and stir fry the chicken.
  3. When the chicken is done, add onions (both) and mix well for 1-2 minutes. Add Carrots and keep mixing.
  4. Add capsicum, cabbage, noodles, and red chili flakes. Keep Tossing on high flame. Use both hands using spatulas while tossing.
  5. Lastly add spring onions greens, and green chilies on top and give the last mix.
  6. Adjust salt and spices according to your taste and serve.
