Amber’s Expert Tips for the Perfect Peri Peri Wrap
“After years of recreating restaurant-style recipes at home, I’ve found that the secret to a great Peri Peri wrap isn’t just the spice—it’s the balance of acidity and the ‘Bhuna’ technique.”
1. The “Restaurant-Style” Secret
Most restaurants use a high-flame sear to lock in juices. When cooking your marinated chicken, avoid overcrowding the pan. Cook in small batches on medium-high heat until the edges are slightly charred. This provides that smoky depth that mimics a professional grill.
2. The Sauce “Mellowing” Trick
Peri Peri sauce can sometimes be too sharp or acidic. Since I started my blog in 2014, I’ve learned that mixing your Peri Peri sauce with a tablespoon of Greek yogurt or heavy cream before marinating creates a much more “velvety” mouthfeel without losing the heat.
3. Avoiding the “Soggy Wrap”
To keep the tortilla firm, always apply a thin layer of mayonnaise or butter to the wrap before adding the salad. This creates a fat-based barrier that prevents the juices from the chicken and vegetables from soaking into the bread.
